Jalapeno Poppers

My garden finally produced enough Jalapenos for making Poppers. Spicy and smoky side dish.


INGREDIENTS

6 jalapeño peppers

4 slices of bacon - cooked and crumbled

4 oz. cream cheese

4 oz. sour cream

6 oz. sharp cheddar cheese - grated

1 clove garlic - minced

1 small tomato - optional garnish

1 Tbsp oil - for the tinfoil


Heat grill or oven to 350°F

Slice jalapeño peppers in half, length wise. Clean all the insides out with a spoon. Rinse and set aside. Cook and crumble bacon for the mixture. 

In a mixing bowl combine, cream cheese, sour cream, grated sharp cheddar, minced garlic and bacon. Stir until evenly combined. 

Lay out tinfoil and spread oil over it to keep the peppers from sticking. Spoon cheese mixture into peppers, don't over fill. (extra cheese mixture is great for dipping chips) Place peppers on tinfoil. Grill for 20 to 30 minutes on medium heat, until desires tenderness and cheese mixture is melted. Or put in oven for 20 to 30 minutes until desired doneness. Place in broiler for 1 to 2 minutes to brown top. (watch closely so not to burn)

Garnish with chopped up tomatoes pieces. (optional)

Serve warm and enjoy!
