Curried Chicken Pita Pockets

Curried Chicken Salad


INGREDIENTS

3/4 cup mayonnaise

1 tsp. soy sauce

1 tsp. lemon juice

1/2 tsp. curry powder

1 small onion, finely chopped

2 1/2 cups shredded chicken or cubed chicken ( I cooked and picked a whole Woodbridge Chicken)

1 1/2 cups halved seedless green grapes

3/4 cup chopped celery

1/2 cup sliced almonds

10 pita breads, halved


DIRECTIONS

  1. In a large bowl, combine the first five ingredients. Stir in chicken, grapes and celery; refrigerate. Just before serving add the almonds. Stuff about 1/4 cup into each pita half.

ENJOY!

NOTE: I don’t mix the almonds directly into the salad, I sprinkle them on top like a garnish. Not everyone likes almonds here.
