Kielbasa Summer Salad


INGREDIENTS

1 pound Woodbridge Kielbasa Links, fully cooked

1 can (15 1/2 oz.) black eyed peas, rinsed and drained

2 medium tart apples, cut into 1/2 inch pieces

1 medium pepper, chopped (I used orange for color)

4 large green onions, thinly sliced

DRESSING:

1/3 cup oil (I used avocado oil)

3 Tbsp. cider vinegar

1 Tbsp. Dijon mustard

2 tsp. sugar

1/2 to 1 tsp. pepper


DIRECTIONS

  1. Halve the cooked kielbasa sausage lengthwise and cut into 1/4 inch slices.

  2. in bowl, combine peas, apples, peppers, onions and sausage.

  3. In small bowl, combine the dressing ingredients; mix well.

  4. Pour over sausage mixture and toss to coat

  5. Cover and refrigerate for 4 hours or overnight

  6. Serve cold.
